THE Gael

Matured in sherry & bourbon casks from Jerez, Spain & Kentucky, U.S.A. the Gael is a blend of Irish malt & grain whiskey with some of the oldest whiskeys from our flavour library.

MAY 2015

Louise begins the process of creating a library of whiskeys to bond with by sourcing Single Malt and Single Grain Irish Whiskey from the most notable old distilleries in Ireland.

The art of bonding takes patience and a discerning palette:

As the spirit finish in Bourbon and sherry casks in our Cooraclare rackhouse, Louise decides that this first blended JJ Corry whiskey will be called the Gael.

Named after the bicycle that her fellow entrepreneur (and Victorian kindred spirit) JJ Corry designed, built, cycled and sold. More than a nod to her predecessor, The Gael represents the first leg of our journey in the revival of Irish Whiskey Bonding.

March 2017

Our first ever JJ Corry expression, The Gael Batch No.1 is released.

Oct 2018

The Gael becomes a multi-award-winning release, receiving numerous gold medals at the Irish Whiskey and World Whiskies Awards. The name JJ Corry has announced its return to the World of Irish Whiskey.

May 2021

Travel to Montilla, Spain

We meet with Rafa, a third generation cooper who agrees to join our whiskey adventure and stock out a diverse library of sherry flavours for future batches of the Gael

Louise gradually creates a carefully balanced marriage of Irish Whiskey from the youngest and oldest stocks in our rackhouse.

The blend has been perfected. The barrels of different spirits are disgorged and blended.

Inspired by the flavours that our Andalucian sherry casks are bringing to our whiskey, we once again travel to the hilltop of Montilla to source more sherry casks for the next expression of the Gael.

The gael tasting notes

Orange hard candy develops into candied orange peel, before giving way to cooked stone-fruit flavors: apricot frangipane tart and peach cobbler. These rich complex notes are dusted with dry spices - cloves, nutmeg, cinnamon - which gradually reveal themselves.

We released Batch No.3 of our award winning flagship blend, The Gael in 2021. A blend of Malt and Grain Whiskey, Gael is the perfect marriage of Irish Whiskey flavours.

Comprised of some of the oldest whiskeys in our library of flavours, The Gael is the perfect representation of our fruit bomb house style with layers of complexity.

Specifications

Nose

An immediate hit of Irish Whiskey’s signature orchard fruits—with a suggestion of ripe red apple but dominated by white peaches and apricots. Floral notes, and hints of freshly cut lawns and Douglas Fir dance around those stone fruits.

Palate
